Fedellos do Couto Bastarda is a red wine produced in D.O. Ribeira Sacra by Fedellos do Couto in O Couto, Ourense.
The philosophy of these "Fedellos" (a Galician word meaning lively) is to respect the rural environment and traditional agriculture. That's why these four young winemakers decided to establish this winery in 2013 in Ribeira Sacra, a magnificent setting. They cultivate 4 hectares of native grape varieties between the Valle do Bibei and the Sil River, and they also collaborate with other winemakers in the area. They grow their vines organically, incorporating biodynamic principles.
Fedellos do Couto Bastarda is made from Merenzado vines, which are approximately 15-70 years old and are planted in slate soils. Fermentation is carried out with the whole grapes (without destemming them) in stainless steel tanks with their own yeasts and very gentle maceration. The wine is then decanted into French oak barrels where it ages for 12 months.
